Gin and Earl Grey syrup, topped with sparkling wine.

Ingredients

  • 45mL Drumshanbo Gunpowder Irish Gin
  • 15mL Earl Grey tea simple syrup
  • Two dashes bitters
  • 85mL sparkling wine
  • Ice
  • Lemon peel, to garnish

Method

  1. Shake the gin, syrup and bitters with ice.
  2. Double-strain into a glass.
  3. Top with sparkling wine and add a lemon twist.
